Protein Crepes

A simple, high-protein crepe recipe made with egg whites, a little flour, milk or cream, and salt.

Ingredients

• 8 egg whites (about 150 g / 5.3 oz)
• 3 tablespoons all-purpose flour (24 g / 0.85 oz)
• 1 tablespoon milk or heavy cream (15 ml / 0.5 fl oz)
• ½ teaspoon salt (about 3 g / 0.1 oz)

Instructions

1. Whisk the egg whites lightly. Add the milk or heavy cream and whisk again.
2. Add the flour and whisk gently. If small lumps of flour form, use a hand mixer to blend the mixture until smooth.
3. Add the salt and give it one final light whisk.
4. Heat a non-stick pan over medium heat. Add a small amount of your preferred oil and spread it evenly across the pan using a paper towel. You don’t need much oil.
5. Once the pan is hot, pour in some of the mixture and spread it into a thin, even layer.
6. Cook over medium heat until the bottom is set, then carefully flip it and cook the other side.
7. For each additional one, you don’t need to add much oil. Less than ½ teaspoon (2.5 ml) of oil is enough. You can spread it around the pan with a paper towel before adding the next portion of the mixture.
