Banana Date Nut Bread - Roselle

Ingredients

• 3/4 cup sugar
• 1/4 cup shortening (or butter)
• 2 cups mashed ripe bananas
• 1 tablespoon lemon juice
• 1 3/4 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 cup chopped dates
• 1/2 cup chopped nuts

Instructions

1. Preheat oven to 350°F (175°C).
2. Grease a loaf pan.
3. In a large bowl, cream the sugar and shortening until light and fluffy.
4. Add in the mashed bananas and lemon juice. Mix.
5. In a separate bowl, whisk together the flour, baking soda, and salt.
6. Add the dry ingredients to the banana mixture and stir until just combined.
7. Add in the chopped dates and nuts.
8. Pour the mixture into the prepared loaf pan.
9. Bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
10. Let cool in the pan for 10–15 minutes.
